Simple butter scotch castle cake

Castle cakes are little girls favorites, I made this Simple castle cake for my daughter’s Birthday and frosted it with her favorite color pink  🙂 .  I found this edible 3D paper, it comes in different characters, I chose princess character to go with the theme.  The cake is Butter scotch flavor with butter scotch whipping cream.

I’m going to explain the procedure to make the cake and whipping cream, rest of the procedure like decorating will be explained in the pictorial.
Let’s see the procedure for Simple butter scotch castle cake.




For cake:-

All purpose flour/maida400 grams
Sugar400 grams
Butter200 grams
Butter scotch essencefew drops
Baking powder2 tsp

For Icing:-

Whipping cream1 liter
Butter scotch essencefew drops
Food color (pink & green)few drops

For decorating:-

Sugar¼th cup
Gems/color coated candiesfew
3 D edible paper1
Ice-cream cone1
White chocolate100 grams
Pink food colorfew drops
Wooden skewers3-4
Princess doll1

For sugar syrup:-

Sugar¼th  cup
Water¼th  cup





For cake:-

First separate egg yolk and whites in separate bowls, whisk the egg whites until it forms stiff peaks and keep it aside. Now whip the egg yolks until its pale and foamy and keep it aside. In a large bowl add butter and powdered sugar, blend until its fluffy, add the egg yolks, butter scotch essence and whisk it well.
Now add the sifted flour and baking powder little at a time and whisk it gently, once it well combined fold in the egg whites gently, don’t deflate the air in the egg whites.

Pour the batter in the prepared molds and bake it in the pre-heated oven at 180 º C for 45-50 minutes, every oven is vary like size and watts so keep an eye on the cake.
It take 20 minutes for the pillar.

Once the cakes are baked, place it in the wire rack and allow it to come to room temperature. Level the cake and slice it into 3 equal slices and keep it aside.





For sugar syrup:-

Place a pan on medium flame add the sugar and water bring it to boil / till sugar melts, switch off the flame and add the butter scotch essence. Once the syrup come to room temperature, pour it in the squeeze bottle for easy access.

For  praline :-

Place a non-stick pan on medium heat, add the sugar and leave it until the sugar melt and turns into golden color. Now Pour it on the greased pan and allow it to cool .
Once it hard break it into small pieces and grind it into coarse using food processor.


For Icing :-

Place the whipping blades and bowl in the freezer for 15 minutes. In the chilled bowl add the whipping cream and whisk until it forms stiff peaks. Cover the bowl with plastic wrap and place it in the refrigerator.

For tower:-

Melt the white chocolate in double boil method, add food color and whisk it well. Dip the ice-cream cone in the chocolate and place it in the refrigerator.


For assembling and icing :-

Place lower slice on a cake board, sprinkle sugar syrup and add the colored cream and praline, place another slice and repeat the same process. Cover the cake with thin layer of cream and place it in the refrigerator for 20 minutes.
Now take cake out from the fridge and decorate it, place the edible sheet on the cake.
Now apply cream on the tower cake, insert skewers for easy access. Place the tower cake near the round cake, cut the skewers little bit, place the prepared ice-cream cone on the tower, Add the details and the castle cake is ready to the party.
