Plum cake

Plumcake or fruitcake is cake with rich in dehydrated fruits and nuts. It’s perfect for the Christmas or any other occasion. The cake is non-alcoholic, replace the eggs with milk for an eggless version.  You can easily double the recipe and it works like a charm.

 Ingredients:-

All purpose flour/maida 200 grams
Sugar 200 grams
Butter 100 grams
Milk ¼th cup
Eggs 4
*Dry fruits 1 cup
Cocoa powder 4 tbsp
Baking powder 2 Tsp
Orange 1
Clove 2
Cinnamon 1 inch
Star anise ½

 

Procedure:-

Add half of the sugar in a non-stick pan and place it on the medium flame, mix occasionally once the sugar turns into golden color add half of the butter and milk, whisk well and the caramel is ready. Add the prepared caramel over the dry fruits, mix well and set it aside. In a mixer jar or blender add the remaining sugar along with star anise, clove, and cinnamon, blend it well.

In another bowl add the remaining butter and powdered sugar, using whisk mix it well. Now add one egg at a time and mix that also, add the juice and zest of the orange and give it a mix.
Add the flour, baking powder and cocoa powder, whisk it well. Now add the reserved dry fruits mixture, mix well and pour it into the greased baking pan. Bake it in the preheated oven at 180 C for 30-35 minutes or toothpick inserted comes out clean. Once it baked take it out of the oven and let it sit on the countertop for an hour, then unmould it and serve.

*Dry fruits that I used are dehydrated blueberry, cranberry, pineapple, cherries. Dates, raisins, almond, cashew, pistachio, and walnuts.
