For this recipe you need sponge cake, you can use ready made one / you can make scratch, I used sponge cake, for a recipe: – Sponge cake
Once you prepared the cake, allow it to come to room temp,t hen cut the cake into little squares, and keep it aside.
In a sauce pan add 1 cup of water, bring it to a boil.Add 2-3 tbsp of mixed fruit jam and whisk till the jam melts, switch off the stove.
Once the jam mixture is warm, take one piece of cake at a time and dip it in the jam mixture and place it in the fridge for 15-20 minutes.
Now gently coat desiccated coconut to the soaked jam cake and again place it in the fridge for 10 minutes and serve.This cake contains a lot of moisture and coconut, so refrigerate is preferable.
