Gajar ka halwa

Gajar ka halwa is famous north Indian dessert, In winter the carrots shown in the picture are available at many places, they are sweet,  juicy perfect for halwa. If you can’t find this variety, use regular carrots. This halwa rich and taste brilliant, let’s see the procedure for Gajar ka halwa,

Ingredients:-

Red carrots / Gajar2 kg
Ghee5 tbsp
Cashewsoptional
Milk1 liter
Sugar½ kg

 

Procedure:-

Wash, peel and grate carrots and keep it aside,  place a heavy bottomed pan in medium flame add ghee , once the ghee is hot enough add cashew (optional) as per your taste fry, drain and keep it aside.

In the same pan add the grated gajar fry well, when it slightly change color add milk and cook until the milk evaporate, mix once in while, once the milk reduced into half add sugar ( as per your taste) . Mix well and cook until the moisture fully dried up. Garnish with roasted cashew and serve.
