Focaccia is nothing but pizza base, the dough is literally drenched in olive oil and loaded with rosemary and basil herb. Some bake it plain and some other top it with caramelized onions and so on. I like to eat veggies a lot, so I added some veggies to my bread. It’s really personal preference, you can add whatever you want, the choice is endless.

Ingredients:-
Pizza dough | 1 |
Fresh rosemary | 2 tsp |
Fresh basil | 10-15 leaves |
Olive oil | 5 tbsp |
Onion | 1 |
Cherry tomato | 15 |
Capsicum | 1 |
Mushroom | 10 |
Sliced green olives | 2 tbsp |
Salt & pepper | as per your taste |
Procedure:-
Add the chopped herbs into the pizza dough and knead it well, allow it to rise for 1-2 hours or its double in size. Meanwhile prepare the veggies, grease the baking pan with olive oil. Place the dough on the greased pan and press it gently, make the indents with your fingers and add a generous amount of olive oil. Now top it up with fresh veggies and cover the dough with plastic wrap / wet kitchen towel and allow it to rise for 1 hour. Place the tray into the preheated oven at 200º C for 15 minutes. Place the bread on the top rack of oven for 5 more minutes to get nice golden color. slice it and serve it with garlic cream cheese or with soup.
