Finger millet / ragi is one of the healthiest millet, it’s rich in calcium and fiber. Finger millet (ragi) Idly is really good breakfast for diabetics and for weight watchers too. Recently I visited my mom and she was into this millets, she was making millet breakfast and ragi mudde for lunch, they taste really brilliant. Once I got back to home I tried her Finger millet /ragi Idly and it turned out really good. Onion chutney goes well with this recipe, any spicy chutney, and sambar with coconut chutney also will be amazing. Even simple Idly podi will save your day.
Let’s see the procedure,

Ingredients:-
Finger millet /ragi | 2 cups |
Idly rice | ½ cup |
Urad dal | ½ cup |
Salt | to taste |
Procedure:-
Soak the finger millet / ragi for overnight, in another bowl add the Idly rice and urad dal and soak it for overnight.
Next day morning wash the soaked ragi and add into the grinder/ blender and grind it for 20 -25 minutes.
Meanwhile, wash the soaked rice and dal, once the millet is almost ground add the rice and dal, allow it to grind for another 5 minutes, the batter should be slightly coarse. Add salt.
Transfer the batter to a large bowl and cover it, set it aside to ferment. It will take around 5-8 hours or doubled in size.
Now grease the Idly molds and pour the batter and steam it for 10-15 minutes.
De-mold the Idlies and serve it with Onion chutney / Idly podi.

Very healthy recipe, but i never knew the taste how it will be 🙂
It tastes pretty much as regular Idly.You must try it.
