Creamy basil pesto pasta is one of the most popular Italian recipe. Here I made this recipe with homemade pesto but you can use ready-made pesto also. Traditionally they use pine nuts in the pesto, here it’s really hard to find pine nuts so I used almonds, you can use walnuts or cashews also. Make sure to use good quality extra virgin olive oil, to achieve the authentic taste. Here I used chifferi rigati macaroni pasta, my kids love that shape but you can use penne/ fusilli.

Ingredients:-
Macaroni pasta | 250 grams |
Fresh basil leaves | 2 handful |
Garlic | 1 |
Almonds | handful |
Lemon juice | 1 |
Extra virgin olive oil | to grind |
Cheddar cheese | 100 grams |
Milk | 1 cup |
Salt & pepper | as per your taste |
Procedure:-
Prepare the pasta as instructed on the back of the packet.
In a mixer jar adds the fresh basil leaves, almonds, peeled garlic pods, lemon juice and blitz it. Now add olive oil little at a time and grind it into a smooth paste, add salt and pepper, pesto is ready.
Place a wide pan over medium heat and add milk and grated cheese, once the cheese melted, switch off the flame and add the cooked pasta, prepared pesto and some more cheese and mix well.
Adjust the seasoning and serve it.
