Cheesy eggplant fritters… oh my god..they are crispy out side and soft and cheesy inside, we just loved it. I usually made deep-fried items on weekends only, I tired of making Manchurian, bhaji’s… I remember few days back I saw this recipe on YouTube https://www.youtube.com/watch?v=RO1dzl0lOGA So I checked it, made few changes and the result was amazing.

Ingredients:-
Eggplant | 1 |
Cheddar cheese | few slices |
For sauce:- | |
Tomato ketchup | 5-6 Tbsp |
Basil | few leaves |
Spring onion | 1 small bunch |
Dry chili | 1 |
Pepper corns | ! tsp |
Oregano | 1 tbsp |
Garlic | 10 pods |
salt | to taste |
For dipping & rolling:- | |
Rusk | 15 slices |
Oregano | 1 tsp |
Basil | 1 tsp |
Pepper corns | 1 tsp |
All purpose flour | 3 tbsp |
Corn flour | 3 tbsp |
Salt | to taste |
Pepper powder | to taste |
Basil & oregano | pinch |
Oil | deep frying |
Procedure :-
First prepare the sauce, in a mixer jar add spring onions, garlic, pepper, basil grind it coarsely. Add the tomato ketchup, oregano and mix well. Keep it aside.
Grind the rusk and flavor it with dry basil, Oregano, pepper corns into fine powder.
In an another bowl add the all purpose flour, corn flour, salt, pepper powder, dried herbs, mix well. Add water and make into thin batter.
Cut the eggplant as shown below.
Apply sauce in the eggplant, add cheese, dip it in the batter then roll it in the rusk powder.
Now deep fry them in medium hot oil.
Once it turn golden strain it and serve it as it is or along with dip.
