Bitter gourd / bitter melon is one of the common veggie in India. Most people don’t cook them because of its bitter taste. Here I’m going to explain the tasty Bitter gourd coconut masala fry. In this recipe I didn’t do much to get rid of the bitterness, if you are not a fan of bitter gourd, do this following step before preparing the recipe. Add 2 tsp of salt in the chopped bitter gourd, mix well and keep it aside. After 20-30 minutes squeeze the bitter gourd pieces and discard the water and continue the below procedure.

Ingredients:-
Bitter gourd /bitter melon | 250 grams |
Onions | 250 grams |
Fried gram / roasted peanuts | handful |
Garlic | 6 cloves |
Tamarind | marble size |
Chili powder | 1 tsp |
Oil | 2 tbsp |
Mustard seeds | ½ tsp |
Hing / asafoetida | pinch |
Salt | to taste |
Procedure:-
Wash and dry the bitter gourd, use the tender ones. If it contain hard seeds discard it or chop it and add it in the curry, it gives nice crispy texture.
Place a wide pan on medium heat, add oil followed by mustard seeds. Once it start to pop add the hing.
Now add the chopped bitter gourd and fry well.
Once it almost cooked add the chopped onions and fry well.
Meanwhile add the fried gram / roasted peanuts in the mixer jar along with garlic, coconut, tamarind and grind it.
Add the prepared coconut mixture, chili powder and salt to the fried bitter gourd and mix it gently.
Fry well till the raw smell from the garlic disappear.
Serve it hot with ghee rice or it goes well with sambar rice.
