Apple pie is one of my favorite desserts. The outer crust is buttery, flaky…it just melts in your mouth. I used Fuji apples, you can use your favorite apples but adjust the sugar accordingly. Serve warm apple pie with vanilla ice cream, it’s a match made in heaven.
Let’s see the procedure,
[recipe title=”Apple pie” servings=”4-5″ time=”100mins” difficulty=”medium”]
Ingredients:-
For crust:- | |
All-purpose flour | 2½ cup |
Baking powder | 1 ½ tsp |
Sugar | ¼th cup |
Salted butter | 1 cup |
Egg yolks | 3 |
Cold water | 3-4 tbsp |
For filling:- | |
Apple | 8-10 |
Butter | 1 tbsp |
Raisins | 3 tbsp |
Sugar | ¼th cup |
Brown sugar | ¼th cup |
Cinnamon powder | 1 Tsp |
All purpose flour/maida | 2 tbsp |
Procedure:-
For this recipe, you need to prepare 2 things, the crust/outer layer, and the filling. The crust/outer layer should be flaky, buttery and crispy too.
Crust/outer layer:-
In a wide bowl add flour, baking powder and sugar whisk it once. Now add the really cold butter cut into small pieces, I used salted butter if you are using unsalted butter add 1/4 tsp of salt in the flour. Rub the butter to the flour, it should look like wet sand. Now add 3 egg yolks, mix well. Add 3-4 tbsp of cold water and make into a crumbly dough *DON’T OVER KNEAD THE DOUGH*. Divide the dough into two parts, shape them into a ball by pressing gently and roll them in the plastic wrap, place the dough in the fridge for 15- 30 minutes. Meanwhile, prepare for the filling,
Apple filling:-
Peel the apples and cut into pieces, place a pan on medium heat and add butter followed by the chopped apples, raisins. Cook for 2 minutes, when the apples are half done add the sugar, cinnamon powder and flour (this flour helps to thicken the filling), mix till the sugar melted and switch off the flame and allow it to cool.
Assembling the pie:-
Take the dough out of the fridge and roll it (rolling this dough is little tricky, roll them with patience) place the rolled dough in the tart tin/pie dish, if there is any cracks or gaps fill it with some extra dough. Add the filling, cover the pie tin with another sheet of pie dough, make a slit or X on the top. Place it in the preheated oven at 190-degree c for 35-40 minutes, you can also make them in the cupcake tin as mini pie’s, adjust the timing accordingly, for mini ones it takes around 20-25 minutes and for the big one’s bake it around 35-40 minutes. Once it baked allow it to cool a bit and cut a slice and serve it with vanilla ice cream.
